what is progress

we are a popup restaurant. that means we don't play by anyone's rules but our own and we never make the same thing twice. we could be french fine dining one night, and be serving curry in takeaway boxes the next. we focus on highlighting local products, spaces, and talents, while bringing you delicious food and unique experiences.

we are people with day jobs, just like you. we are a chef, a bartender, and a wine rep. and though we may use the space or equipment of a restaurant, we are our own entity--our own team. we are passionate lovers of food and drink who who are striving to share that love with our city.

it started as a wild hair and turned into a fever dream.

across a bar, a lady looked at a gentleman and said, "let's start a popup." a man overheard and the project grew legs. 

and through the late nights, copious meetings, insanity, achy limbs, and tired eyes, they created food with love.

Michael Schmitz

juice procurer; wine wizard

whether you know him as michael, or "jersey," you know the new jersey native has a wealth of knowledge of the foodservice industry, bringing more than 15 years of experience with him. from washing dishes, to cooking, to serving, to helping to create wine programs for james beard award nominated restaurants, to hosting pop up dinners in his garage, he's done just about everything there is to do. described as "the ultimate swing player," jersey can step seamlessly into nearly any role, be it mixologist, sommelier, baker, line cook, or bus boy, he keeps things moving for progress. 

daniel ernce

chef; wild idea generator

daniel began his cooking journey as a child, with his mother, as soon as he could stand on a chair to reach the kitchen counter. at 16 he began hosting dinner parties for friends and family and continued to do so, honing and experimenting over the years. daniel began working at a food innovations firm in 2013 where he has worked with chefs from various michelin starred restaurants including blackbird, daniel, the french laundry, and more. daniel's extensive travels, which include several months in australia, as well as tours in china, europe, and central america, as well as his time at michelin-starred restaurant 1O8 in copenhagen, have also come to influence his voice in the kitchen. 

Travis Jenkins

sous chef; bringer of sanity

travis joined the team, unofficially, in august of 2016, and made the transition from hired hand, to sous chef in june of 2017. travis has a lengthy history of restaurant experience, making him a force in the kitchen both creatively and physically. his current job as an r&d chef for the marlin network has allowed him to understand food through new filters and experiences, as he travels the country, cooking, dining, and expressing his craft. coffee enthusiast, amateur mixologist, and lover of the finer things in life, travis brings balance, creativity, and gravity to both the team and the kitchen. 

Cassidy Rollins

front of house manager; cocktail queen

more than just the prettiest member of the progress team, cassidy, having grown up in the ozarks, brings more than 10 years of industry experience to the table. behind the bar, cassidy has experience in fine dining and private parties. her position as bartender and live music coordinator at barley, wheat, & rye social house has allowed her to grow deep roots in the community's music and arts scene. her current position as a bartender at the order allows her to creatively express herself through beverage. lover of all things outdoors, italian food, and red wine, cassidy keeps the progress team organized, on track, and on pace in all their endeavors.
